Taiyuan City (太原市), the capital of Shanxi Province, China.

No visit to Taiyuan is complete without tasting its bold, comforting cuisine. The city is the proud home of 刀削面 (knife-cut noodles) — thick, chewy ribbons of dough shaved directly into boiling water.
Pair them with aged Shanxi vinegar (山西老陈醋), known for its deep aroma and complex flavor, and you’ll quickly understand why this region is revered for its hearty, satisfying food.
